One of the main enemies of the oil is light, both the direct and diffuse. Olives contain chlorophyll, a substance used in photosynthesis to convert light energy absorbed into oxygen and sugar. Chlorophyll is responsible for the green colour, mainly typical for new oils and it is an excellent preservative because it is an antioxidant but this happens only in the dark. If the oil is exposed to the sun, the chlorophyll will become the cause of oxidation which first determines variations in the colour the oil will become limpid tone, it will go from green to yellow tones, in the long run it becomes orange and the oxidation will make it progressively rancid. For this reason, the oil must be stored in slightly permeable containers to light.
